Greek Power Bowl

minutesWhenever I return back to Texas from Michigan – I always find myself craving Greek food! We have a ton of authentic, delicious Greek restaurants in the Metro-Detroit area, but that’s not the case here in Austin – so I decided to take matters into my own hands, and it turned out to be delicious! This Greek Power Bowl recipe is all of the things – for many reasons. It’s super quick, easy to make, healthy, protein-packed and super flavorful. Give this a shot one night this week & save the leftovers for lunch!
Ingredients
4 cups prepared orzo pasta
4 boneless chicken breast
1 bottle light greek salad dressing
1 large cucumber, chopped
1 container cherry tomatoes, halved
1 lemon, juice
salt & pepper, to taste
Tzatziki sauce (I use store-bought!)
reduced fat feta cheese
Directions
- Put chicken breasts in a large gallon plastic bag and cover in Greek dressing. Let marinate in the fridge overnight or at least for two hours.
- Prepare orzo according to package instructions. Once cooked, drain & set aside.
- Chop cucumber, onion & tomato and add into medium-size bowl. Add lemon juice & season with salt and pepper.
- Place cooked (still warm) orzo into the bottom of the bowl.
- Layer chopped (still warm) grilled chicken.
- Add in veggies.
- Top with a dollop of Tzatziki sauce & feta cheese.
