Shrimp Tacos

2 pounds fresh or frozen shrimp
1 TB olive oil
1 tsp. paprika
1/4 cup chopped cilantro
2 cups shredded cabbage
corn or flour tortillas
limes
salt and pepper to taste
- Sriracha Mayo
1/3 cup light miracle whip or Mao
1/2 TB sriracha
Directions
- Heat a large skillet over medium heat & spray with nonstick cooking spray.
- Toss shrimp in skillet with olive oil. Season with salt, pepper and paprika. Cook until shrimp is pink and cooke through, about 5-10 minutes.
- Make the slaw by combining cabbage and fresh cilantro. Squeeze the juice of one lime onto slaw and mix.
- Place sriracha mayo sauce into ziplock bag and cut the corner. Squeeze onto the top of each taco.
- Top with extra cilantro and fresh squeeezed lime juice.
