Say hello the perfect, healthy appetizer or pie dish! These are a definite crowd favorite not only because they taste good, but because they are guilt-free & vegetable based! This a great recipe to throw together & bring to a party or get together – and the sriracha ranch dipping sauce takes the flavor to the next level!

Ingredients

  • 4 zucchini

  • 1 cup Panko breadcrumbs

  • 3 eggs

  • 1/4 cup water

  • 1/2 cup grated parmesan

  • 1/2 tsp dried oregano

  • 1/2 tsp. dried basil

  • 1/2 tsp. garlic powder

  • salt & pepper to taste

  • Sriracha Ranch Dipping Sauce
  • 1/2 cup ranch dressing

  • sriracha sauce to taste

Directions

  •  Preheat oven to 350 degrees & line a baking sheet with parchment paper.
  • Cut zucchini in half & then into quarter spears lengthwise.
  • In a small mixing bowl, combine bread crumbs, parmesan, thyme, oregano, basil, garlic powder, salt and pepper.
  • In a small bowl, beat 3 eggs and 1/4 cup water.
  • Dip zucchini spears in egg mixture and then dredge in bread crumb mixture. Place on baking sheet & repeat until all spears are coated.
  • Bake for 20-25 minutes.
  • Combine ranch dressing & sriracha (less if you don’t like it very spicy!) and place in dipping bowl.
  • Serve immediately with dipping sauce and top with fresh chopped parsley.
