Fruit Pizza

minutesThis was one of my favorite spring/summer dessert recipes that I grew up on! My mom always customizes this recipe depending on the occasion or season – which is what is so fun about it! Normally, we make it in a pizza pan (feel free to do that if you want to forego the egg shape!) – and deck it out with fruit filled with festive colors. Red, White & Blue for Memorial Day or Fourth of July, and pretty spring colors for Easter. This is a great dessert to make ahead of time, too – you can prep this about a day or two before and keep it refrigerated until it’s time to serve.
Ingredients
1-2 packages refrigerated sugar cookie dough
12 oz. softened cream cheese
1/2 cup confectioners sugar
1 TB milk
1 tsp. pure vanilla extract
fruit of your choice
Directions
- Grease a cookie sheet. Pat cookie dough onto pan and mold into an egg shape and bake at 350 degrees for 10-15 minutes. Set aside & let cool.
- In a medium bow using a hand mixer or standing mixer, combine cream cheese, confectioners sugar, vanilla & milk until smooth.
- Once the cookie is cooled, spread cream cheese frosting on top of cookie.
- Arrange fruit on top of cream cheese as desired. Refrigerate until ready to serve.
