Rice Krispie Easter Egg Nests

minutesHappy Easter! This recipe is a holiday-spin on a classic treat that pretty much everyone loves…Rice Krispies Treats! It’s such an easy & quick treat to make, which actually requires no baking or oven time at all. With just a couple of extra steps, you can turn the classic Rice Krispies Treat into a cute little bird’s nest, perfect for celebrating at any Easter gathering. Edible grass sounds odd, but it’s very easy to find in most grocery stores (and places like Target, Walmart, etc) during the Spring by the Easter candy/baskets. If you can’t find any edible grass, you can always use green food coloring on shredded coconut for the same look. Enjoy!
Ingredients
6 cups Rice Krispies cereal
10 oz. bag mini marshmallows
3 TB butter
edible Easter grass (or you can dye coconut shreds green if you can’t find the grass!)

Directions
- Spray a muffin pan tin with non-stick cooking spray & set aside.
- In a medium saucepan over low heat, melt butter. Once butter is completely melted, add in marshmallows and occasionally stir until you reach a fluffy texture. It will be really sticky looking!
- In a large mixing bowl, add your Rice Krispies cereal. Then, stir in the marshmallow/butter mix and stir until cereal is evenly coated. It will be *very* sticky, but that’s how you know you are doing it right!
- With a spoon, scoop about one heaping spoonful of your coated Rice Krispies mix into a greased muffin cup. Use the spoon to gently press the center down to make a nest-like shape. If the spoon is sticking to the mixture, spray the spoon with non-stick cooking spray, or feel free to use your fingers!
- Once all of the tins are filled, put the pan of Rice Krispies nests in the freezer for about 20-30 minutes so that the nests harden & set in their shape.
- Shortly before you are ready to serve, fill each nest with edible grass & candy eggs. Keep in the refrigerator until ready to serve if prepping ahead of time!
