High Protein Chocolate Chip Cookies

minutesAre you ready for the best high protein chocolate chip cookie recipe EVER?! I’ve tried so many times to master this…and it always seems to be a flop. They are too dry, to spongy, or taste not-so-good. Too good to be true, right? Nope! The key to success: COTTAGE CHEESE!
If you are not a fan of cottage cheese, I get it – but trust me with this one. You won’t even know it’s in there!
Another thing I’ll say about this recipe: when you are finished with the dough, it’s going to feel wrong. It’s super sticky and hard to work with…I was a little worried, to be honest! Even when they came out of the oven, they didn’t look like your typical “cookie”…but the taste and texture was absolutely UNREAL. Doughy, dense and the best…packed with protein. I can’t wait for you guys to try them!
Ingredients
1 cup full fat cottage cheese (I recommend Good Culture)
1 tsp pure vanilla extract
1/4 cup pure maple syrup
1 cup all-purpose flour
1/2 cup vanilla whey protein (BPN’s bakes the BEST!)
2 TB melted coconut oil
1/2 cup chocolate chips
Directions
- Preheat your oven to 350 degrees and spray a baking sheet with non-stick cooking spray or line with parchment paper.
- Using a food processor or blender, combine the cottage cheese, maple syrup & vanilla. Blend until smooth and fully combined.
- In a large mixing bowl, add flour and protein powder and whisk until combined. Add in the melted coconut oil, and then add the cottage cheese mixture.
- Use a standing or hand mixer to mix until fully combined. The dough texture will be very sticky – this is normal!
- Fold in chocolate chips.
- Use a spoon or ice scream scoop to scoop dough into balls. Place onto baking sheet. Flatten each dough ball with a spatula or hand – they won’t expand or rise much so you want to give them that “cookie” shape with your hand or spatula.
- Bake for about 15 minutes and let cool for 10 minutes before enjoying!
