Bacon, Egg & Cheese Biscuit Casserole

minutesYour favorite breakfast sandwich, in baked form! This is truly one of the easiest casserole recipes I make – and it bakes fast, too! This casserole truly has a bite of bacon, egg, cheese & biscuit in every single bite. It’s great for large groups & great for a post-church or event brunch if you have everything prepped ahead of time.
Ingredients
8 eggs
3 TB milk or milk substitute
1 cup shredded cheddar cheese
1 package bacon of your choice
1 & 1/2 cans of buttermilk biscuits
salt & pepper
Directions
- Preheat your oven to 350 degrees. Spray a 9×12 baking dish with nonstick cooking spay & set aside.
- Cook bacon according to package instructions. Chop into bite size pieces.
- In a large bowl, whisk together the eggs, milk and salt & pepper.
- Cut up biscuits into about 1 inch chunks. Place onto bottom of the greased casserole dish, covering the dish evenly.
- Pour the egg mixture over the biscuits. Sprinkle 1/2 of the bacon pieces over top.
- Bake in the oven, uncovered for 20 minutes.
- Take out, and sprinkle the top of the casserole with the shredded cheese and the rest of the bacon. Place back in the oven for 10-15 minutes.
- Cut into desired serving size slices & serve immediately.
