If you are in need of a homemade, delicious recipe that your whole family will love, you have to try these Blueberry Breakfast Bars! I like to whip these up in bulk and have them ready for breakfasts or even a snack for our kiddos on busy week. They give the nostalgic Nutragrain vibes – but without all of the processed junk. These are sweet, soft yet crumbly…and delicious cold out of the fridge on their own, or warmed up with some greek yogurt served on top. Heck, you could even make this a dessert and serve with vanilla ice cream. The options are endless!

Blueberry Breakfast Bars
Ingredients
- 1 cup oats
- ¾ cup all-purpose flour
- ¼ tsp baking soda
- pinch of salt
- 1 tsp cinnamon
- ⅓ cup light brown sugar
- 6 tbsp unsalted butter melted
- 1 tsp pure vanilla extract
- 1 cup blueberries fresh
- ¼ cup granulated sugar
- 2 tsp corn starch
Instructions
- Preheat oven to 375 and line a square baking dish with parchment paper. Leave extra on the sides so you an use it to pull the bars out.
- In a medium bowl, combine oats, flour, baking soda, salt, cinnamon and light brown sugar. Mix until fully combined.
- Add in melted butter and vanilla extract. Mix until a loose, dry(ish) crumble forms.
- Pour half of the oat mixture into the bottom of the pan and press down firmly creating the base of the bars. Save the other half of the crumble and set aside.
- In a small bowl, combine blueberries, sugar and cornstarch. Mix until blueberries are fully coated.
- Pour coated blueberries on top of oat base layer.
- Sprinkle the remaining oat mixture on top of blueberries.
- Bake for 45 minutes at 375 or until blueberries are bubbly and starting to burst.
- Let cool completely before cutting into bars or squares. Store in fridge!
