Kim’s Cornflake Crunch Cookies

Get ready for one of my favorite childhood cookie recipes! Fun fact: my mom had a cookie store/bakery when I was younger – and this was one of her signature cookies! I know what you’re thinking…cornflakes – in cookies? Nah! But do NOT knock it until you try it! They are sweet, flavorful, crunchy but soft at the same time…sooo good! Enjoy, and thanks mama banda for crafting this masterpiece of a recipe!
Ingredients
1 cup butter, softened
1 cup canola or coconut oil
1 cup sugar
1 cup light brown sugar
1 cup crushed corn flakes
1 cup chopped walnuts
2 cups oats
4 cups flour
1 TB baking soda
1/2 tsp. salt
2 tsp. vanilla
1 egg
1/2 cup coconut flakes
Directions
- Preheat oven to 325 degrees.
- Cream together butter & sugars until light and fluffy.
- Add egg, oil, and vanilla. Mix well until combined.
- Add oats, cornflakes, coconut and nuts, stirring well. Add in flour, baking soda & salt.
- Mix until combined fully. Refrigerate dough for 10 minutes if you have time.
- Use an ice cream scooper to form dough balls and place on parchment paper or greased cookie sheet. Flatten balls slightly with the palm of your hand.
- Bake for 12-15 minutes, or until golden brown. Allow to cool slightly before removing from cookie sheet.
