I love avocado toast, but if I could change one thing about the delicious breakfast…it would be that it needed just a tad more protein! Cottage cheese is obviously have a major moment these days, so why not add it to avocado toast? I loved the way it turned out – the consistency was fluffy and it added a really yummy savory, smooth flavor. You have the savory avocado/cottage cheese combination mixed with the sweetness from the balsamic glaze and lemon juice, and topped off with the saltiness of the Everything But the Bagel seasoning…it’s truly perfection. This would also be so delicious with an over-easy egg on top!

Cottage Cheese Avocado Toast
Ingredients
- 2 tbsp cottage cheese I love using Good Culture’s full fat cottage cheese
- ½ avocado
- lemon
- Everything But The Bagel seasoning
- balsamic glaze
Instructions
- In a small bowl, combine cottage cheese, avocado and the juice from 1 squeezed lemon. Mix with a fork or whisk until fully combined and fluffy.
- Spread on top of sourdough toast. Drizzle balsamic glaze overtop and top with Everything But the Bagel seasoning.
