Who doesn’t love a baked potato?! And the only way to make it better – is to make it bite sized! This recipe turns traditional baked potatoes into finger food…perfect for any party or gathering! Feel free to get creative with toppings, and don’t forget the sour cream! Enjoy!

Ingredients

  • 1 lb baby potatoes

  • 2 TB olive oil

  • salt & pepper

  • sour cream (I like using the squeezable kind for this)

  • shredded cheddar cheese

  • bacon (cooked & chopped)

  • fresh green onion (chopped)

Directions

  • Preheat your oven to 375 degrees. 
  • While the oven is preheating, add baby potatoes (whole) to a large bowl. Drizzle with olive oil & season with salt and pepper.
  • Once evenly coated, spread the potatoes onto a greased or parchment paper-lined baking sheet. Make sure the potatoes are spaced evenly apart & not touching.
  • Bake for about 35 minutes, or until the potatoes are cooked through. About halfway through, rotate potatoes for an even bake.
  • Let cool slightly. Cut a small wedge in each potato, and top with desired toppings. Serve immediately!
