Pizza Muffins

If you’re a 90’s kid like me…you understand the nostalgia of bagel bites! Gosh, it brings me right back to coming home from school, popping them in the oven & *devouring* them in seconds. So good. As good as those little suckers are…the ingredients could be better. So let’s do what we do best, and make them homemade!

These are more of a muffin than bites…but my kids loved them! They are great for meal prep, and a packed school lunch. The best part is, you can totally customize and top these to you & your family’s liking. This is also such a fun recipe to include your kiddos in. Have fun, get creative & enjoy!

Ingredients
  

  • cups all-purpose flour
  • ½ cup milk or milk substitute I used whole milk
  • 2 tbsp olive oil
  • 1 whole egg
  • ¼ tsp salt
  • 1 tsp baking powder
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp parsley
  • 1 cup pizza or marinara sauce
  • mini pepperoni or any topping of your choice
  • basil

Instructions
 

  • Preheat your oven to 375 degrees.
  • Combine flour, baking powder, salt, onion powder, parsley & garlic powder together in a bowl. Whisk to fully combine.
  • Add in egg, milk and olive oil. Mix in until fully combined.
  • Spray a muffin tin tin nonstick cooking spray & fill each cup with the batter about 1/3 of the way full.
  • Use a tablespoon to spoon about 1 TB of pizza or marinara sauce onto the top. Add your shredded cheese and whatever toppings you are including.
  • Bake at 375 for 10-12 minutes or until the edges are golden brown. Top with chopped basil or honey!
