Sweet Creamy Corn Casserole

minutesThis is a holiday recipe that I *didn’t* grow up on – but had something like it at a Friendsgiving a few years ago. It was love at first bite, and since then it’s been a staple at our Thanksgiving feast. It’s like creamy, sweet cornbread that you can eat with a spoon. So much flavor!
Ingredients
1 8.5 oz. package Jiffy Cornbread Muffin Mix
1 stick of butter, melted
1 can sweet corn, drained
1 can cream style corn
1/2 cup sour cream
2 eggs
1/2 cup granulated sugar
Directions
- Preheat your oven to 350 degrees & spray a 9×9 square baking pan with nonstick cooking spray. Set the pan aside.
- In a medium mixing bowl, combine cornbread mix, melted butter, corn and creamed corn. With a hand or standing mixer, mix on a low/medium speed until full combine.
- Stir in sour cream, eggs & sugar. Mix until combined.
- Pour casserole batter into sprayed pan. Bake for 40-45 minutes or until the center is full baked through.
- Let cool slightly before serving. Enjoy!
