

Sweet Potato Nachos

minutesFinally, a healthier way to enjoyed loaded nachos! If you’re a fan of sweet potato fries, you will LOVE this recipe! Feel free to get creative with toppings. In my opinion – the more, the merrier! Use plain Greek yogurt as a healthy alternative to sour cream for dipping.
Ingredients
3 large sweet potatoes, peeled & sliced
1 tsp paprika
1 tsp garlic powder
2 TB olive oil
salt & pepper

sweet corn
black beans
olives
chopped cilantro
shredded Mexican or cheddar cheese
pico de gallo
chopped peppers
chopped onion
jalapeños
sour cream
guacamole
salsa
Directions
- Preheat oven to 425 degrees. Spray a baking sheet with non-stick cooking spray.
- Peel & slice potatoes (thin) with mandoline or sharp chef’s knife.
- In a bowl, toss the sweet potato chips with olive oil, paprika, garlic powder, salt & pepper. Spread evenly onto prepared pan.
- Bake for 20 minutes and use a spatula to flip the chips, and then back for another 15-20 minutes or until crisp.
- Take chips out, and add all toppings over the chips. Return back to oven until cheese melts, about 5-10 minutes. Serve warm.
