Perfectly Unperfect Homemade Chocolate Chip Granola Bars

minutesI don’t know about you, but those yummy, Chewy granola bars were always a staple in my lunches & afternoon snacks growing up – so good, right!? What’s even better…is making them yourself so you know exactly what’s in them! Everything tastes a little sweeter when it’s homemade, right?! These are super easy to make & taste just like the real thing. Enjoy!
Ingredients
2 cups oats
4 TB coconut oil
1/3 cup honey
1/4 cup light brown sugar, packed
1/2 tsp pure vanilla extract
2 cups rice krispies cereal
1/2 tsp salt
1/3 cup mini chocolate chips
Directions
- Preheat oven to 350 degrees. Line a 8×8 or 9×13 baking dish with parchment paper and spray with nonstick spray. (this will make it easier to get the bars out!)
- In a saucepan over medium heat, melt brown sugar, coconut oil and honey together. Stir until the brown sugar is dissolved, and let simmer. Then, add vanilla extract. Once combined, remove from heat to cool.
- On a greased baking sheet, spread out the oats & place in oven – toasting for 5 minutes. Once they turn golden brown, take them out!
- In a large bowl, combine the toasted oats, Rice Krispies & salt. Once combined, pour the oil/honey/sugar mixture over the dry ingredients and stir gently until fully coated.
- Let the mixture cool slightly & then add in the chocolate chips. Pour the mixture into the pan (ontop of the parchment paper) and press firmly. Add extra chocolate chips to the surface if desired.
- Let chill/set in fridge for at least an hour. Then, take out to cut into the size/shape you’d like. Store in an airtight container at room temp.
