Baked Parmesan Zucchini Fries

This a great recipe to throw together & bring to a party or get together – and the sriracha ranch dipping sauce takes the flavor to the next level!
Ingredients
4 zucchini
1 cup Panko breadcrumbs
3 eggs
1/4 cup water
1/2 cup grated parmesan
1/2 tsp dried oregano
1/2 tsp. dried basil
1/2 tsp. garlic powder
salt & pepper to taste
- Sriracha Ranch Dipping Sauce
1/2 cup ranch dressing
sriracha sauce to taste
Directions
- Preheat oven to 350 degrees & line a baking sheet with parchment paper.
- Cut zucchini in half & then into quarter spears lengthwise.
- In a small mixing bowl, combine bread crumbs, parmesan, thyme, oregano, basil, garlic powder, salt and pepper.
- In a small bowl, beat 3 eggs and 1/4 cup water.
- Dip zucchini spears in egg mixture and then dredge in bread crumb mixture. Place on baking sheet & repeat until all spears are coated.
- Bake for 20-25 minutes.
- Combine ranch dressing & sriracha (less if you don’t like it very spicy!) and place in dipping bowl.
- Serve immediately with dipping sauce and top with fresh chopped parsley.
