I don’t know I went most of my life without ever having orzo, but when I finally did – I had no idea what I was missing! It’s an amazing pasta dish that can compliment any meal. It’s light, satisfying & there are so many different ways you an flavor and feature it. This recipe is my favorite – tastes of lemon, garlic and parmesan…in every single bite! We love serving this with grilled chicken thighs, shrimp or scallops. 

Ingredients

  • 1 cup orzo

  • 2 TB butter

  • 2 TB minced garlic

  • 2 cups chicken broth

  • 2 TB lemon juice/zest from lemon

  • 3 cups fresh spinach

  • 1/4 cup shredded parmesan cheese

Directions

  • In a medium saucepan, heat butter over medium heat. Add orzo and garlic & cook for 3-5 minutes or until lightly browned.
  • Add chicken broth. Cover and cook for 20 minutes, occasionally stirring until orzo is cooked. Add spinach in the last 5 minutes and let it sauté/reduce.
  • Fluff orzo to distribute spinach evenly and stir in parmesan cheese, lemon juice & zest. Serve immediately!
