This Asian Crunch Chicken Salad has quickly become one of my favorite chicken salad recipes EVER! If you are a fan of Asian flavor, you are going to love this. No cooking required – this is served chilled, making the it the perfect option for meal prep for the week. It’s one of those recipes that I could have every single day for a week straight, and never get sick of it. It’s sweet, savory, and has the perfect crunch in every bite. You’re going to be obsessed!

Asian Crunch Chicken Salad

Ingredients
SALAD INGREDIENTS
- 2 cups purple cabbage chopped
- 2 cups cole slaw mix
- 1 ½ cups carrots julienned
- 1 bell pepper chopped
- ¼ cup cilantro chopped
- 3 mandarin oranges chopped
- ¼ cup green onion chopped
- 3 cups shredded chicken
- ½ cup slivered almonds
PEANUT DRESSING INGREDIENTS
- ½ cup smooth peanut butter
- ¼ cup soy sauce low sodium
- ¼ cup chicken or bone broth
- 2 tbsp lime juice
- 2 tbsp honey
- 1 tsp sriracha or hot sauce
- 1 tsp garlic powder
- ½ tsp toasted seasame oil
- ½ tsp ground ginger
Instructions
- Finely chop purple cabbage, bell pepper, cilantro, oranges and green onion. Add to a large bowl.
- Add in shredded cole slaw, carrots and shredded chicken. Mix everything up until fully combined.
- Make dressing. Add all ingredients to a medium mixing bowl and whisk until fully combined and smooth.
- Add slivered almonds to salad and dressing to the salad and toss to fully coat.
