Blueberry Lemon Bread

- 1 cup fresh blueberries 
- 5 TB butter, melted 
- 2 cups flour 
- 1 cup granulated sugar 
- 2 eggs 
- 2 lemons, zested & juiced 
- 1 tsp. baking powder 
- 1/2 cup milk or milk substitute 
- Lemon Glaze
- 1 lemon, juiced 
- 1/4 cup confectioners sugar 
Directions
- Preheat oven to 350 degrees. Spray a 9×5 baking loaf pan with cooking spray.
- Combine blueberries and 1 TB of flour in a small bowl and set aside. Stir so blueberries are coated in flour. This will help the blueberries stick to the batter and avoid sinking to the bottom.
- In a large bowl, mix together melted butter, eggs, lemon zest, juice and almond milk.
- Add in flour, sugar and baking powder.
- Once batter is mixed throughly, gently fold in blueberries.
- Pour batter into loaf pan and cook for 55 minutes on the middle rack, or until bread starts to golden. (use a toothpick or butter knife to check if the middle is baked through!)
- Let bread cool for about 5 minutes. Drizzle glaze on top of loaf. The glaze should harden in about 10 minutes.
