Butter Garlic Smashed Potatoes

Description

I hope you’re ready to try your new favorite side dish! These smashed potatoes are a crowd favorite, always. They are bite-sized, crispy and packed with so much flavor…complimenting any main dish. I actually prefer these over french fries and I think you will, too!

If you have leftovers – don’t throw them away! Keep them in the fridge, and just pop them in the air fryer to crisp them back up before enjoying. Somehow, they taste even better out of the air fryer next day!

  1. Preheat oven to 425.
  2. In a large pot, boil potatoes until soft & you can stick a fork through them. (usually about 15-20 minutes)
  3. Line a baking sheet with parchment paper. Place boiled potatoes on baking sheet with equal spacing between each potato.
  4. Use the bottom of a glass and press down gently on each potato. If the potato is sticking to the bottom of the glass, spray a little bit of non-stick cooking spray to the bottom of the glass.
  5. In a bowl, melt butter and whisk in mixed garlic. Once fully combined, drizzle over top potatoes.
  6. Sprinkle parsley, salt/pepper & parmesan over potatoes.
  7. Bake in oven at 425 for 15-20 minutes or until crispy.
  8. Garnish with extra parmesan and parsley before serving.
