Butter Garlic Smashed Potatoes

Ingredients
  

  • bag of baby potatoes any kind work but we love using gold for this recipe
  • 2 cloves garlic minced
  • ½ stick unsalted butter
  • ¼ cup chopped fresh parsley
  • ¾ cup grated parmesan cheese
  • salt & pepper to taste

Instructions
 

  • Preheat oven to 425.
  • In a large pot, boil potatoes until soft & you can stick a fork through them. (usually about 15-20 minutes)
  • Line a baking sheet with parchment paper. Place boiled potatoes on baking sheet with equal spacing between each potato.
  • Use the bottom of a glass and press down gently on each potato. If the potato is sticking to the bottom of the glass, spray a little bit of non-stick cooking spray to the bottom of the glass.
  • In a bowl, melt butter and whisk in mixed garlic. Once fully combined, drizzle over top potatoes.
  • Sprinkle parsley, salt/pepper & parmesan over potatoes.
  • Bake in oven at 425 for 15-20 minutes or until crispy.
  • Garnish with extra parmesan and parsley before serving.
