Nachos = crowd favorite, every. single. time. Truly one of my biggest guilty pleasures!
This is one of my favorite recipes to get creative with when it comes to flavors – everything is optional according to your liking…but in my opinion when it comes to nachos, the more the merrier! We love to smoke these on our Traeger grill, but if you don’t have a grill or smoker, the oven will work just fine!

Loaded Nachos
Ingredients
- tortilla chips
- shredded mexican cheese
- shredded montgomery jack cheese
- cotija cheese
- meat of your choice ground beef, shredded chicken, chorizo, etc.
- jalapeno chopped
- sweet potato cubed
- black olives
- sweet corn
- sweet onion diced
- beans of your choice I like using black or pinto
- chopped cilantro
- chopped green onion
- pickled onion
- salsa, sour cream, or guacamole for topping
- chile lime,fajita, or taco seasoning
Instructions
- Pre-cook whatever meat you are including in the nachos!
- Lay your tortilla chips down on a large, parchment paper lined baking sheet.
- Layer away! I like to start with a layer of cheese, add all of the toppings, and finish with another layer of cheese.
- Save the pickled onion for the end as a garnish! Along with extra chopped green onion, cilantro & cotija cheese.
- Smoke or bake at 325 for about 30-45 minutes, or until the cheese is melted and sweet potato is soft (if you are including cubed sweet potato!).
