Loaded Nachos

Ingredients
  

  • tortilla chips
  • shredded mexican cheese
  • shredded montgomery jack cheese
  • cotija cheese
  • meat of your choice ground beef, shredded chicken, chorizo, etc.
  • jalapeno chopped
  • sweet potato cubed
  • black olives
  • sweet corn
  • sweet onion diced
  • beans of your choice I like using black or pinto
  • chopped cilantro
  • chopped green onion
  • pickled onion
  • salsa, sour cream, or guacamole for topping
  • chile lime,fajita, or taco seasoning

Instructions
 

  • Pre-cook whatever meat you are including in the nachos!
  • Lay your tortilla chips down on a large, parchment paper lined baking sheet.
  • Layer away! I like to start with a layer of cheese, add all of the toppings, and finish with another layer of cheese.
  • Save the pickled onion for the end as a garnish! Along with extra chopped green onion, cilantro & cotija cheese.
  • Smoke or bake at 325 for about 30-45 minutes, or until the cheese is melted and sweet potato is soft (if you are including cubed sweet potato!).
