Pepperoncini Chicken Salad

If you are in need of a quick, healthy but delicious lunch option for the week, y’all have to try this pepperoncini chicken salad. This has truly become one of my favorite chicken salads ever – it gives off a sour cream + onion flavor to me and I’m here for it!

I love prepping a big batch of this on Sunday night and keeping it in the fridge for easy + quick lunches to grab throughout the week. You could make a sandwich with this chicken salad, or serve it in a bowl with crackers or chips! Pro tip: I love combining this with Siete salt + vinegar chips. So delicious!

Pepperoncini Chicken Salad

Ingredients
  

  • 4 cups shredded chicken
  • 1 cup plain greek yogurt
  • 2 tbsp mayo I like using Primal Kitchen's
  • ½ cup chopped white onion
  • 1 ½ cups chopped celery
  • ½ cup chopped pepperoncinis
  • 2 tbsp pepperoncini juice
  • 1 tbsp hot pepper jelly
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • salt & pepper to taste

Instructions
 

  • Add all ingredients to a bowl, mayo & pepperoncini juice last and toss until fully coated.
  • Keep refrigerated in an airtight container for upto a week.
