Salmon Sushi Bowls

minutesNick & I love sushi – it’s one of our favorite foods to indulge in! While I wish it was easy to make homemade sushi rolls from the comfort of our own kitchen – I’m just not there as a home chef quite yet, haha! If you’re like me & aren’t ready to master the whole homemade sushi thing, this recipe is for you! This is basically like sushi, in a bowl! Same flavors, just a whole lot easier to make!
Ingredients
1 cup sushi rice (rinse before making!)
1 salmon filet
1/2 cucumber, sliced
green onion, chopped
pickled carrots (see recipe below)
edamame beans
sesame seeds (toasted & regular)
spicy mayo (see recipe below)
salt & pepper
1 TB sesame oil
- Pickled Carrots
1 large carrot, julienned
1/4 cup rice vinegar
1/4 cup sugar or sugar substitute
1/4 tsp salt
- Spicy Mayo
1/4 cup mayo or miracle whip
1 TB Sriracha sauce
1/2 tsp sesame oil
- Other Optional Ingredients to Add
Avocado
Seaweed
Shrimp
Soy Sauce
Wasabi
Directions
- Start the pickled carrots. In a bowl, whisk together the vinegar, sugar & salt. Add the julienned carrots to the bowl and allow them to soak while the rest of the meal is being prepared.
- Prepare sushi rice according to packaging instructions. Set aside.
- Brush sesame oil onto salmon filet & season with salt and pepper. Bake at 400 degrees for 20-15 minutes, or until salmon is full cooked. For a crispier filet, broil for 2 minutes at the end.
- Slice cucumbers and chop green onion.
- Time to assemble! Spread rice onto bottom of bowl. On top, add carrots, edamame beans, cucumber, and salmon filet. Top with sliced green onion and sesame seeds. (if you like them toasted, pop sesame seeds in the oven still at 400 degrees on a baking sheet for 2-5 minutes!)
- Drizzle with spicy mayo, serve & enjoy!
