Sweet & Salty Granola

Granola is one of those things that once you start making it homemade – you may just never go back to buying store-bought again! Don’t get me wrong, store-bought granola is great…but it tends to be ultra-processed and loaded with unnecessary preservatives, sugar and oils, and that’s no bueno! Making granola from scratch at home is actually so easy, and it’s so fun to get creative with the flavors. This is my go-to recipe – it’s the perfect combination of salty and sweet. I love using it in yogurt or smoothie bowls! Feel free to use any nuts of your choice – there are no rules here!

Ingredients
  

  • 4 cups rolled old fashioned oats
  • cup coconut oil melted
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup crushed cashews
  • ½ cup crushed pecans
  • 2 tbsp chia seeds
  • flaky salt to taste

Instructions
 

  • Add oats, crushed nuts & chia seeds to a large bowl and mix until fully combined. Set aside.
  • In a small bowl, whisk melted coconut oil, maple syrup, and vanilla extract together until fully combined. Pour mixture over oat mixture and toss until everything is evenly coated.
  • Spread coated granola out evenly onto a parchment paper lined sheet pan. Sprinkle flaky sea salt overtop.
  • Bake at 325 for 7 minutes, take out and stir/flip granola. Put back in for another 7-10 minutes until you reach your desired level of crunchiness!
