Add oats, crushed nuts & chia seeds to a large bowl and mix until fully combined. Set aside.
In a small bowl, whisk melted coconut oil, maple syrup, and vanilla extract together until fully combined. Pour mixture over oat mixture and toss until everything is evenly coated.
Spread coated granola out evenly onto a parchment paper lined sheet pan. Sprinkle flaky sea salt overtop.
Bake at 325 for 7 minutes, take out and stir/flip granola. Put back in for another 7-10 minutes until you reach your desired level of crunchiness!
