Preheat your oven to 425 degrees. Line a baking sheet with parchment paper.
Half your sweet potatoes and place them on the baking sheet and bake in the oven for 20 minutes.
Take the sweet potatoes out and drizzle each potato with olive oil, honey and flaky salt. Pop back into the oven for another 15-20 minutes or until soft.
Take the potatoes out and add little bit more flaky salt to each potato and cut them into wedges. Serve immediately!
