You guys know I love my reindeer chow when it comes to sweet treats during the holidays – but this cracker toffee bark may be tied as my favorite! The first time I made this year ago, I couldn’t *believe* how much it tastes like fancy toffee or bark you would buy in a store…but in reality, it’s made from SALTINES! Yes, saltines. The combination of saltines, chocolate & homemade toffee (just butter & sugar) is the perfect, to-die-for salty & sweet combination for any holiday gathering. Make a lot, because this bark will go fast!

Ingredients

  • 2-2.5 sleeves saltine crackers (however many it takes to fill your baking sheet)

  • 2 sticks unsalted butter

  • 1 cup light brown sugar

  • 1.5-2 cups chocolate chips

  • crushed peppermint

  • crushed pecans

  • cracked sea salt

Directions

  • Preheat your oven to 325 degrees & line your medium to large baking sheet/pan with parchment paper. 
  • Arrange saltine crackers in a single layer on the baking sheet, salt side up. Cover the entire baking sheet, with little to no space in-between each cracker.
  • Melt 2 sticks of butter and brown sugar in a saucepan on a low heat. Occasionally stir until you reach a gentle boil & a brown, foamy texture. About 3-5 minutes.
  • Pour the toffee mixture over the crackers on the baking pan. It will dry & harden quickly, so immediately use a spatula to spread the toffee over all of the crackers.
  • Place the pan in your oven and bake for 5 minutes.
  • Remove the pan from the oven, and immediately sprinkle the chocolate chips over the top of the toffee. Wait about 2-3 minutes – the chocolate chips should start to melt, and you’ll be able to spread the chocolate over the crackers/toffee with a spatula. 
  • Once chocolate is evenly spread, sprinkle sea salt & desired toppings over the chocolate. (Crushed peppermint, pretzels, nuts)
  • Refrigerate the tray for at least 30 minutes to harden. When hardened, take out, and use a knife to break bark into pieces. Keep in refrigerated until ready to serve!
