Brown Sugar Pecan Crumble Pumpkin Muffins

minutesIf you’re like me, you can never get enough pumpkin the Fall! These muffins are AMAZING & will make all of your pumpkin dreams come true. The brown sugar pecan crumble is what really makes these muffins so unique and delicious. They’re great for an indulgent breakfast, or a sweet treat for dessert!
Ingredients
2 & 1/2 cups all-purpose flour
2 cups sugar
2 tsp. baking powder
2 TB pumpkin pie spice
1/2 tsp. salt
1 & 1/3 cup pure canned pumpkin
1/3 cup oil (vegetable, canola, olive or coconut)
2 tsp. vanilla extract
2 eggs
- Brown Sugar Pecan Crumble
4 TB flour
2 TB brown sugar
2 TB white sugar
1 TB pumpkin pie spice
3 TB unsalted butter (melted)
3 TB chopped pecans
Directions
- Preheat oven to 375 degrees. Grease muffin cups for use paper liners & set tray aside.
- Prepare the crumble. In a small bowl, mix flour, sugars, pumpkin pie spice, chopped pecans & softened/melted butter until crumble forms. Set aside for now!
- In a large bowl, mix together the flour, sugar, baking powder, pumpkin pie spice and salt.
- In a medium bowl, beat together eggs, pumpkin, oil & vanilla. Beat together until smooth & then add into the dry ingredient mixture.
- Fill muffin cups with batter about 1/2 full. Then, sprinkle the crumble on top of each muffin, covering the entire surface evenly.
- Bake for about 25-30 minutes, or until golden brown! Test the center with a toothpick to ensure the muffins are cooked through.
