Ready for the easiest, but most delicious last minute appetizer dish EVER?! This has quickly become my go-to recipe that *looks* really fancy, but takes 15 minutes to put together. The ultimate trick to whip up this loaded hummus quickly: use store bought hummus! Definitely feel free to get fancy and make your own, but who has time for that?! LOL! Grab a container or two of your favorite hummus, put it in a pretty dish, load it up with some vegetables + flavor and voila, an easy side dish that everyone will love! This is also a great compliment to a protein + rice bowl – it adds so much flavor!

Ingredients

  • 1-2 containers plain hummus

  • 1 green bell pepper

  • 1 red bell pepper

  • 1 cucumber

  • 1 cup feta cheese

  • 2 TB oil of your choice (I love using olive or chili oil).

  • salt & pepper to taste

  • kalamata olives (optional)

Directions

  • Spread hummus evenly onto plate or in bowl.
  • Add chopped bell pepper & cucumber.
  • Sprinkle feta cheese over top.
  • Season with salt and pepper.
  • Drizzle oil over top. Serve immediately or keep in fridge until ready to serve! This tastes great with fresh pita bread, pita chips, pretzels, vegetables, or as a side with your favorite protein & rice.
