Low Calorie Pumpkin Fluff

minutesSay hello to one of my favorite, healthy fall snacks! I love to incorporate pumpkin to a lot of things this time of year – and this is such an easy delicious way to do it! I think the first time I had this was when my mom was doing weight watchers back in the day – this was one of their “low cal snacks” and we’ve made it almost every year ever since! It’s sooo good with graham crackers or apples. Enjoy it, guilt-free!
Ingredients
1 15 oz. can of pure pumpkin
1 packet packet of sugar free vanilla pudding mix
1 8 oz. tub of fat-free, sugar-free cool whip
1 TB pumpkin pie spice
4 TB the milk of your choice
Directions
- In a large bowl, add the pumpkin, pudding mix, milk & pumpkin pie spice into a bowl. Mix until smooth.
- Slowly fold in the cool whip until a light, fluffy texture is reached!
- Serve with graham crackers, fruit, pretzels, or enjoy on its own! Keep refrigerated.
